Christmas Polish Gingerbread Recipe

Despite its name, this traditional treat resembles a soft honey cake infused with aromatic spices and orange zest. It pairs perfectly with mulled wine!

Ingredients

  • Orange: ½
  • Honey: 5.6 oz (160 g)
  • Sugar: 3.5 oz (100 g)
  • Unsalted butter: 2.1 oz (60 g)
  • Fruit jam: 2 tablespoons
  • All-purpose flour: 7.4 oz (210 g)
  • Baking powder: 1 teaspoon
  • Baking soda: 1 teaspoon
  • Salt: ¼ teaspoon
  • Ground cinnamon: 1½ teaspoons
  • Ground nutmeg: ½ teaspoon
  • Ground allspice: ½ teaspoon
  • Ground cloves: ½ teaspoon
  • Ground cardamom: ⅛ teaspoon
  • Eggs: 2
  • Milk: 120 ml + 1 tablespoon
  • Dark chocolate: 2.5 oz (70 g)
  • Vegetable oil: 1 tablespoon
  • Nuts: to taste

Instructions

  1. Preheat the oven to 350°F (180°C). Line a loaf pan with parchment paper.
  2. Zest the orange and combine the zest with honey, sugar, butter, and jam in a small saucepan.
  3. Stir the mixture over low heat until the sugar dissolves. Remove from heat and let it cool to room temperature.
  4. Sift the flour and mix it with baking powder, baking soda, salt, and spices. Whisk the eggs until smooth.
  5. Pour the milk and honey mixture into the eggs, mixing well. Gradually add the dry ingredients, beating until combined.
  6. Pour the batter into the prepared loaf pan and bake for 45–50 minutes until done. Remove from the pan and allow to cool slightly.
  7. Break the chocolate into small pieces and melt it in the microwave or over a double boiler. Mix in the vegetable oil and one tablespoon of milk. Drizzle the glaze over the gingerbread and garnish with nuts.
