Ingredients
For the crust:
1 ¼ cups graham cracker crumbs
¼ cup unsalted butter, melted
1 tablespoon cocoa powder
For the filling:
6 oz dark chocolate, chopped
2 cups cream cheese
¾ cup powdered sugar
1 tablespoon cornstarch or custard mix
3 large eggs
3 egg yolks
¾ cup sour cream (20% fat)
½ teaspoon cocoa powder
1 tablespoon hot water
For the glaze:
2.5 oz dark chocolate, chopped
½ cup heavy cream
1 teaspoon liquid honey
Instructions
In a food processor, crush the graham crackers until fine. Add the melted butter and cocoa powder, and blend again. Press the mixture into the bottom of a 9-inch (23 cm) springform pan and place it in the freezer.
Melt the dark chocolate in a double boiler or microwave and let it cool. In a large bowl, combine the cream cheese, powdered sugar, and cornstarch or custard mix. Add the eggs and egg yolks, mixing well, then incorporate the sour cream.
Dissolve the cocoa powder in the hot water and add it to the filling along with the melted chocolate. Mix until smooth.
Pour the filling over the chilled crust and bake in a preheated oven at 350°F (180°C) for 50 minutes.
For the glaze, melt the chocolate, heavy cream, and honey together, then let it cool slightly before pouring it over the cooled cheesecake.
