1 ½ cups graham cracker crumbs
¼ cup unsalted butter, melted
1 cup powdered sugar
1 teaspoon cinnamon
16 oz cream cheese
2 teaspoons lemon juice
4 large eggs
¾ cup sour cream (20% fat)
3 ripe bananas
Instructions
Preheat the oven to 350°F (180°C). In a bowl, combine the crushed graham crackers, melted butter, ½ cup of powdered sugar, and cinnamon. Press the mixture into the bottom of a 9-inch (23 cm) springform pan and bake for 10 minutes.
In a large mixing bowl, blend the cream cheese with the remaining powdered sugar and lemon juice. Gradually add the eggs one at a time, mixing well after each addition. Then, stir in the sour cream and mashed bananas until smooth.
Pour the filling over the cooled crust and bake at 320°F (160°C) for 1 hour.
